Kaiyang Lim obtains his Bachelor of Engineering in Chemical and Biomolecular Engineering (Honors) Nanyang Technological University (Singapore). He went on to further his post-graduate study in the same institute, graduating in February 2016 with a PhD in Chemical and Biomedical Engineering. His PhD research dissertation focuses on the design of de novo antimicrobial peptides as a next-generation therapeutic substitute for antibiotics and development of functional materials as coatings for biomedical devices. Kaiyang is currently an Assistant Professor at the Singapore Institute of Technology (SIT).

His research expertise spans across various disciplines including peptide biochemistry, antimicrobial sciences, material engineering and food technology. His research in the realm of food technology centered around two main areas, (1) development of ‘clean label’ food ingredient with enhanced functionalities and (2) fermentation of GRAS microbes for the production of novel food with improved sensorial and nutritional values. The respective research projects have yielded positive results including industry uptake and potential publications.

His research has equipped him with the fundamental knowledge and relevant research techniques essential in Food Science and Technology, including rheometry, texture analysis, electron microscopy, particle size analysis, fermentation techniques, etc. Kaiyang’s research and teaching endeavor at SIT have also provided him with an opportunity to work with state-of-the-art equipment such as stainless steel bioreactor for biofermentation and cell culture purposes. Kaiyang works closely with tertiary institutes and industry to nurture students and help shape the future global food landscape.
