Biography
UW Professional & Continuing Education
Kristine Duncan is a registered dietitian who has taught nutrition courses at Skagit Valley College for more than 20 years. She has also worked as a clinical dietitian, certified diabetes care and education specialist, and as a consultant providing menu nutrition analysis for a local coffee chain.
Duncan’s professional emphasis has been on vegetarian nutrition, but she enjoys all aspects of food, cooking and eating. Her focus on vegetarian nutrition includes her ongoing quest to find and highlight restaurants making healthy options part of their menu. She’s continually honing her food photography skills and maintains a plant-based blog at veggirlrd.com. She has a Bachelor of Science in Food Science and Nutrition and a Master of Science in Nutrition, both from Central Washington University, where she completed her dietetic internship.
