During his time as a member of the Faculty of Law, Kiat Seng specialized in commercial subjects, teaching a variety of courses including the Law of Insurance and Shipping Law. He also lectured the Law of Torts and Criminal Law.

Kiat Seng has published extensively in the local law journals. He co-authored the first edition of "Constitutional Law in Malaysia & Singapore", which is still used as a primary textbook for law schools in Malaysia and Singapore. He served as Specialist Editor for the subjects of "Agency" and "Moneylenders" in the Mallal's Digest on Malaysian and Singapore Cases. Kiat Seng was a member of the Editorial Board of the Singapore Journal of Legal Studies. Kiat Seng’s expertise in the law of insurance was recognised when he was invited by the Singapore Academy of Law to be the contributing editor for “Insurance Law” in the Annual Review of Singapore Cases, a position which he still holds today. He was appointed by LexisNexis Singapore to be the General Editor for the volume on “Carriers” for the Halsbury’s Laws of Singapore, which was published in 2004.

Kiat Seng is also the Editor of the volume on “Insurance” for the Halsbury’s Laws of Singapore. He was also invited by the Singapore Academy of Law to contribute to the write up on Insurance Law in the Academy’s website to promote the use of Singapore law.

Kiat Seng still maintains links with the Faculty of Law where he is currently an Adjunct Associate Professor. He is the convenor of the course on the Law of Marine Insurance. Kiat Seng also worked with Professor Robert Merkin to set up a course on the Law of Reinsurance, making the National University of Singapore the first university in the world to offer such a course. Kiat Seng is also the convenor of the course on the Law of Reinsurance.
