David Maxwell

I have 25 years restaurant experience in the US, UK and Ireland. My first job was collecting glasses in a bar in Belfast and since then I’ve worn every hat in the business, gaining valuable experiences that have helped me hugely in my current role. I am the MD of Mexican fast casual brand Boojum with locations in Belfast, Dublin, Galway, Cork and Limerick. Boojum is a proven concept in a sector of vast opportunity and is recognised as a leading restaurant brand. The company has grown from 5 locations and 120 staff to what will be 20 locations across a number of store formats with 600 staff in under 3 years.

The Boojum brand has been built upon a foundation of authentic, fresh, healthy and good value food which appeals across the board. I spend at least 1 hour of every day reading and studying what’s happening in our industry. I challenge myself to innovate and grow our amazing business. I have unbelievable support and love from my wife Danielle and when I’m not at work I try to get as much time as possible with my two sons Archie and Leo.
